The Shelf Signal

Heirloom grains, modern formats

Realverdict · Nov 2, 2026

Blue corn, einkorn, emmer and Kernza moving from the bulk bin into branded chips, tortillas, pasta and crackers.

Heirloom and ancient grains are leaving the bulk bin for branded pantry formats: blue corn chips and nixtamal tortillas, einkorn and emmer pasta, heritage-wheat bagels, Kernza crackers. New Hope's 2027 forecast calls an ancient grains revival, an SFA Summer Fancy Food panel flagged the same move, and Whole Foods' 2027 terroir call names origin-specific grains.

The pull is a grain with a name and a place, plus better texture and more fiber in a format the shopper already buys. The obstacle is cost and explanation: traditional processing pushes unit cost well above commodity peers, and "heirloom" means little on its own. Brands that lock in supply and state the variety and region in two lines on pack will hold the premium.
