Background

Wine has sold place for a century. Whole Foods' 2027 forecast says the rest of the store is catching up: single-origin soy sauce aged in one prefecture, chocolate named for a valley rather than a percentage, honey, olive oil and chile flakes with a map on the label.

Provenance works because it is a story the shopper can repeat at the table, and because it justifies a premium that "organic" no longer does on its own. The commercial test is whether the origin is legible in thirty seconds on pack. Brands that can name the farm and the harvest will take the top shelf; brands that say "small batch" without a place will not.
