Background

For a decade the premium aisle sold sweetness dressed as health: date-sweetened bars, fruit-forward sodas, oat milk lattes. Whole Foods' 2027 list calls the reversal: shoppers reaching for bitter on purpose, through amaro-style non-alcoholic aperitivos, dark leafy greens, cacao nibs, coffee-cherry drinks and grapefruit-led sodas.

The pull is the adult non-alc occasion. Bitterness reads as sophisticated and less sweet without saying "diet", and it gives the sober-curious shopper a drink that tastes like a drink. The shelf question is education: bitter does not sell itself from a tag, so the formats that win will be the ones that borrow a familiar frame (spritz, tonic, espresso) rather than lead with the word.
