Background

The first wave of upcycled food sold the virtue. Whole Foods' 2027 list describes the second: food waste re-engineered into products that compete on taste and price, from spent-grain flour and crackers to whole-fruit snacks, pulp pastas and nose-to-tail pet food.

The shopper will buy upcycled if it is also the better product; the mission is a tiebreaker, not a reason. Supply is the moat: brands that lock in a byproduct stream from a brewer, juicer or dairy have a cost advantage nobody can copy quickly.
